What do I need to know in order to certify my winery?

Since the processing of wine takes place over several months, winemaking is somewhat unique in the world of Preparation. PACS can certify the winemaking process prior to the bottling of organic wine; however, the initial inspection of the operation must take place within a reasonable timeframe of the first organic crush of the season.
